Mini Lemon And Coconut Bliss Balls

Recipe Ingredients

(Serves 8- 16 balls) 

  • 65g cup peanut butter
  • 1 tbsp stevia
  • 1 tsp coconut oil
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 50g rolled oats
  • 50g vanilla protein powder
  • 30g flaxseed
  • 30g desiccated coconut
  • 4 tbsp water
  • 1 tbsp extra coconut + 1 tsp extra lemon zest to coat

Mini Lemon And Coconut Bliss Balls

  1. Combine all the dry ingredients, including the lemon zest, in a large bowl and stir until well combined
  2. Melt your coconut oil in the microwave for 20 seconds at a time until melted 
  3. Add all the wet ingredients and mix the mixture until it forms a dough, if it is not combining add a little more water 
  4. Divide the mixture into 16 portions and roll into balls before tossing in the remaining desiccated coconut and lemon zest for the perfect zingy treat to enjoy over an ice tea with friends
