Naked Turkey Burgers and Simple Salad 

Recipe Ingredients

(Serves 6) 

For the burgers: 

  • 450g minced turkey 
  • 1/2 small red onion  
  • 2 cloves garlic  
  • 80g porridge oats  
  • 1 large courgette  
  • 1 egg 
  • tbsp Worcestershire sauce  
  • tbsp thyme  
  • Salt and pepper to taste  

For the salad: 

  • 200g mixed cherry tomatoes  
  • 1 /2 cucumber 
  • 1 /2 small red onion 
  • Juice of  1 /2 lemon  
  • tbsp mixed herbs 
  • Black pepper to taste  

For the sauce: 

  • 150g coconut yoghurt  
  • tsp yellow mustard  
  • 1 /4  red onion 
  • 1 /2 bunch chives 
  • 1 /2 bunch dill 
  • tsp cumin 
  • Juice of 1 /2 lemon  
  • tsp oregano   

Naked Turkey Burgers & Simple Salad

  1. Preheat your oven to 200 degrees. In a large sieve grate and drain your courgette, squeezing the courgette to remove the excess water 
  2. Finely dice the red onion and mince the garlic before combing all the burger ingredients in a large bowl and seasoning  
  3. Evenly split the mixture into 6 portions and roll into balls before pressing down into a burger shape  
  4. Add a few sprays of fry light to a large frying pan and cook the patty’s until golden brown on each side the place on a lined baking tray and bake in the oven for 15-20 minutes   
  5. Chop your tomatoes, cucumber and red onion and place in a bowl, tossing well with the herbs and lemon juice 
  6. For the sauce combine all the wet ingredients in a bowl and stir well, chop the herbs and add to the bowl with the cumin and oregano 
  7. Serve the burgers with a generous helping of the sauce and the delicious crunchy side salad for a refreshing BBQ-style lunch!
