One Pot Chicken Paprika

Recipe Ingredients

Serves 4

  • 4 chicken breasts
  • 3 green peppers
  • 2 medium white onions
  • 1 tin chopped tomatoes
  • 100g black olives
  • 150ml low salt chicken stock
  • 1 tbsp plain flour
  • 0.5 tsp cayenne pepper
  • 1.5 tbsp paprika
  • 2 bay leaves
  • Salt and pepper to taste

Method
1. In a pan add your chopped onions and a few sprays of Frylight until the onions have softened before adding in the flour, paprika and cayenne pepper

2. Chop your chicken (or keep whole if preferred) and fry in the pan until they reach an even golden brown colour

3. Chop the peppers and add to the pan and fry for a few minutes

4. Add in the tomatoes followed by the olives and bay leaves, taste and season accordingly

5. Leave to simmer for a further 20 minutes before serving up this delicious protein-packed, Spanish-style dish, perfect for entertaining on summer evenings.
