Smoked Salmon Mother’s Day Breakfast

Recipe Ingredients

 

  • 120g smoked salmon
  • 1 avocado
  • 2 eggs
  • 4 handfuls of spinach
  • 4 radishes
  • 1 / 2  lemon Salt and pepper to taste

Smoked Salmon Breakfast in Bed

  1. Place a pan of water on the hob and add the eggs once the water is boiling, for a runny consistency boil for 6 minutes
  2. Chop the avocado and radishes and add serve on a plate with the other ingredients, the spinach can be served raw or wilted
  3. Add the soft boiled eggs and season to taste, serving with a wedge of lemon
