Lean Eton Mess

Recipe Ingredients

– 150g low-fat Greek yoghurt
– a handful of fresh or frozen berries (whichever you prefer)
– a teaspoon of good vanilla extract
– two teaspoons of toasted almonds or crushed walnuts
– a tablespoon of freeze dried berries

Unless you’ve lived in the UK, you’ve probably never heard of Eton Mess. It’s basically the most indulgent, wonderful combination of double cream, berries and meringue.

My mother would describe it as ‘light’ (which usually means a portion is about 600 calories) as it’s so refreshing on a hot summer’s day. But after a few attempts, I’ve created an amazing lean version.

If you’ve got a sweet tooth then this is definitely one for you. It works either as a breakfast or snack, takes about 2 minutes to make and is totally on plan. Here’s the recipe for one…

In a bowl, mix together:

– 150g low-fat Greek yoghurt
– a handful of fresh or frozen berries (whichever you prefer)
– a teaspoon of good vanilla extract
– two teaspoons of toasted almonds or crushed walnuts
– a tablespoon of freeze dried berries (I buy the ones available in the kids snacking section. 100% fruit, no sugar added and cheaper than the stuff in the baking section for some reason)

Finally top with a dessert spoon of granola for crunch (I use Lizi’s).

(The only reason I opt for low-fat yoghurt is so I can add the extra flavour of the almonds. If you want normal fat yoghurt that’s fine too, just cut out the almonds)

And that’s it! If you leave it for a few minutes after mixing the fruit will begin to seep into the yoghurt. And the more you mix it, the more it’ll seep. For me the mix above is more than sweet enough but if you want a little more, then you can add a pinch of stevia but do try it without first.
